Fermented in stainless steel tanks at 12-15° C then kept on lees for seven months post fermentation to add texture and complexity.
Ultra-pale lemon colour. Lemon zest, cut green herbs and cracked quartz aromatics. Tight and zippy on the palate, lime and lemon fruits with a saline minerality that is accentuated by crunchy and vigorous acidity. It carries quite long and finishes refreshingly bright. (Screwcap)
