A harvest intern stares into the abyss the bottom of a fermentation bin, where only seeds and skins remain, after everything else has been dug out and moved into the press. Once fermentation is finished and the “free-run” wine is drained away, the remaining material is put into the press to extract the remaining liquid it holds.
