As I’m writing this its 19 degrees Celsius and raining but, on the whole, this summer has been a hot and sunny affair. So what am I drinking and selling at Fix to quench the thirst in these hot and humid times?

Prosecco is going from strength to strength for us. I’m a big fan of it in summer because it is light, refreshing and doesn’t demand too much of your attention. Personally, I’m all-in to support Australian producers and their fight around the use of the prosecco name, and try my best to serve local examples.

The good news is, whatever your preferred tipple, these days the choice and quality of offerings is better than ever, so cheers to summer!

This summer we’ve seen a big lift in Hunter Valley semillon sales as well, and this is great to see. When it’s young I cannot think of a much better white wine for our summer scenes, its crisp and dry and runs at a lower alcohol level than most whites, and these days that is a factor more are conscious about. It can really work with a variety of lighter dishes and is spectacular with oysters. I also love to make a spritzer with it—who needs to add lemon to your mineral water when you can add a liberal splash of current vintage semillon!
