, Sipping Your Way Through December: Wine 19

Here’s the 19th installment of The Wine Chef’s December “Advent Calendar” wine series.

François et Julien Pinon 2022 Vouvray Sec

Vouvray is a white wine crafted from Chenin Blanc grown along the banks of the Loire River in France’s Touraine district. The region’s limestone-rich soils and cool climate produce wines with razor-sharp acidity and stunning minerality, from bone-dry to lusciously sweet. This Vouvray is a dry (Sec) one.

The Pinon family has been crafting wine for seven generations. The estate has been certified organic since 2011, and the family takes a hands-off approach in the cellar, producing wines that feel alive and are bursting with personality.

From the first sip, the Pinon Vouvray Sec grabs your attention with its straight-on lemony zing that electrifies the palate. Yet, while high acidity defines this bone-dry wine, it’s beautifully balanced by a round texture and medley of other aromas and flavors. Notes of peach, apricot, crisp apple, seashell, and saline minerality give way to a hint of honey on the finish. A wine of stunning complexity!

This Vouvray is a natural partner for seafood. I had it with a salmon and avocado sushi roll—a terrific pairing. The wine’s brisk acidity cut through the salmon’s richness, while its saline minerality matched similarities in the soy sauce-dipped sushi.
