In keeping with the house philosophy, this is mainly chardonnay, supported by pinot noir and a small amount of meunier. The rosé colour comes from addition of 6% still pinot noir made entirely from the grand cru of Aÿ. Restrained use of dosage (6 grams per litre) has allowed the finesse and delicacy to emerge after three years ageing sur latte.
Salmon pink. Persistent mousse. Soft rosehip, hibiscus and savoury touches with noticeable development over an earthy, mineral base with woody spice and a complex, finely textured palate. Restrained, savoury and detailed with a brooding, serious side. This needs food to sing. (Cork)
