Dichotomy is from the Greek word “dichotomia”, which means “dividing in two.” So, to be dichotomous is to have more than one side. And, winemakers Rosie Signer and Jarren Jenner believe that there is more than one side to every story, just as there is more than one way to pick a grape and more than one place to pick a grape. In fact, they pick grapes from both Yakima Valley and Australia to make wine. This week, I opened one of their wines from Yakima Valley. It was the Dichotomy 2022 Nebbiolo, Yakima Valley and it is the Please The Palate wine of the week.
