, Building a new wine list

If you read last month’s piece, then you’ll recall FIX has recently gone through voluntary administration. I really don’t want to go over all that again but for the sake of this article it has relevance in that part of the V.A. process means my cellar is no more. This leads me to taking a moment with a blank piece of paper and starting a new wine list from scratch.

A wine list that has a sense of irreverence very much appeals to me, a serious list of wines but not taking itself too seriously.

I have written before about my fascination with wine lists from around the world. They always intrigue me with the way people go about designing them and filling them. There is a lot to be said for the biblical style tomes that have multiple vintages of the great wines of the world. Equally a wine list that has a sense of irreverence (I’m looking at you Terroir New York) very much appeals to me, a serious list of wines but not taking itself too seriously. Something that my sommelier family can struggle with.

In my career I’ve worked with the vinous bibles at Bibendum and Forty One Restaurant and then built a pretty large list here at FIX. With the arrival of COVID that list was whittled down to just under 200 but still a formidable cellar and selection.
