Peregrine is best known for pinot noir—and perhaps the iconic winery in Gibbston Valley with its sweeping roofline. Winemaker Nadine Cross has also created a very fine and classy sparkling wine. Fermented in both stainless steel tanks and old French oak, the pinot noir and chardonnay has integrated well during ageing even before spending 36 months on lees in bottle.
Brooding and complex, it has deep notes of savoury fruit, toast, caramel, brioche and hints of sweet herbs with light apple flavours. A long, tight and driven finish sees the acidity taper in and deliver length as the palate firms up with pithy phenolics. Youthful but with good tension, right to the dry finish. (Cork)
